Chicken One Pot Curry for Caribbean Food Week
Chicken one pot curry is an easy and delicious meal. It is full of flavour and the whole family will love it.
Did you know this week, 24th August – 31st August, is Caribbean Food Week? In the run up to the Notting Hill Carnival Grace Foods UK are giving everyone the chance to enjoy the taste of the Caribbean.
To celebrate Caribbean Food Week there is a national sampling campaign alongside in-store promotional offers. Pop into Asda, Morrisons, Sainsburys and Tesco to find offers on leading Caribbean products like chilli sauce, coconut milk, spices and seasonings, coconut water, aloe vera drinks and tropical juices.
To help me celebrate Caribbean I was sent some Caribbean ingredients and challenged to come up with a recipe. One of our families favourite recipes is jerk chicken so I was happy to try some more Caribbean recipes.
Caribbean ingredients
Caribbean food is full of flavour full of spice and exotic fruit and vegetables. The hamper of ingredients I was sent included seasonings and spices like hot and spicy chicken fry mix, hot curry powder, ginger, garlic and pimento seasoning. There was also a tin of coconut milk and ackees as well as some drinks, ginger beer and aloe refresh and a packet of cock flavour soup mix, which is a spicy chicken noodle soup.
There was a recipe on the back of the packet for Chicken One Pot Curry which I decided to try.
Making chicken one pot curry
I had to adapted the recipe a little as I wasn’t sure where I could get some of the ingredients. It called for a cho cho, yellow yam and escallions. I used a sweet potato which I believe is a yam. For the cho cho I used butternut squash which seems similar. For the escallions I used spring onions and instead of a carrot I used a red pepper. I also changed the spices a little bit, the recipe used fresh ginger and pimento seeds but I used a tablespoon of the ginger, garlic and pimento seasoning instead.
The curry recipe also called for the addition of spinners. These are small balls made from a dough of flour and water which are dropped into the curry and cooked in the sauce. They are a little bit like dumplings. I wasn’t at all sure how these would work but they actually absorb all the flavour of the curry and add extra flavour to the dish.
The curry was lovely, full of flavour and not overpoweringly spicy. It made a delicious evening meal.
The chicken one pot curry is an ideal mid week dinner, it adds a touch of the exotic to your evening. It is easy to make, once the ingredients are in the pan it just needs to be left to simmer until it is ready to serve. The addition of the soup into the gravy thickens the sauce and makes it exactly the right consistency.
Chicken One Pot Curry Recipe
Chicken One Pot Curry
Ingredients
- 3 chicken breasts
- ½ cup white vinegar
- ½ tsp salt
- ½ black pepper
- 1 tbsp garlic ginger, pimento seasoning
- 3 spring onions
- 1 butternut squash
- 1 red pepper
- 450 g sweet potato
- 225 g plain flour
- 1 tbsp curry powder
- ½ litre boiling water
- 1 packet cock flavour soup
Instructions
- Chop the chicken into bite size pieces and rinse with the vinegar.
- Drain and season with salt and pepper
- Peel and chop the vegetables into small pieces
- Combine the flour with water until a smooth dough is formed.
- Heat some oil in a pan and add the curry powder and garlic, ginger and pimento seasoning.
- Add the chicken and stir well
- Add the vegetables, boling water and soup.
- Shape the dough into small balls and add to the mixture
- Simmer gently for around forty minutes until cooked
