This Italian chicken recipe is a mix of chicken and bacon in a creamy tomato sauce. It is perfect for a quick and tasty mid-week meal. Serve with potatoes or rice for a dish the family will love. Read on to get the recipe.

Thinking of meals to make mid-week can always be a challenge. Often we get stuck in a rut and just cook the same things over and over again. This is partly to do with time. When you are at work you just want to get a meal ready and on the table quickly.

It is always a bonus when you come across a recipe you haven’t made for ages and find it is a forgotten family favourite. This Italian chicken is one of these recipes. I recently found it on a bit of paper in one of my recipe books. I thought I haven’t made this for ages so gave it a go. I am so glad I did, the family love it and want it again.

How to make Italian Chicken

This Italian chicken recipe is really easy to make, ideal when you want a quick and tasty dinner in a hurry.  First, chop the chicken, mushrooms and bacon into small pieces. Add some oil to a pan and brown the chicken. Once brown set it aside. Add the mushooms and bacon to the pan and fry for a couple of minutes.  Return the chicken to the pan and add the pasta sauce and water. You can use a jar of pasta sauce or make your own.  Simple pasta sauce is easy to make and you can bulk freeze it.

This recipe goes with a variety of different side dishes. It would go well with spaghetti or tagliatelle. I made rosemary potatoes to go with mine. These are really easy to make and the herbs in the potato complement the dish. Just cut some potatoes into cubes. Boil the cubes of potato in salted water for five minutes. Drain and toss them with oil. Put on a baking tray in an oven and season with salt and pepper and toss with oil. Bake at 200C Gas Mark 6 for twenty five minutes. Five minutes before serving chop some rosemary over the potatoes and cook for those extra minutes.

For an extra hearty meal add a side salad.

Ingredients
  

  • 3 chicken breasts
  • 125 g 4 oz pancetta or bacon bits
  • 120 g 5oz mushrooms
  • 500 g jar tomato pasta sauce
  • 150 ml water

Instructions
 

  • Cut the chicken into cubes. Brown in a pan with a little oil and set aside
  • Chop the bacon and mushrooms into pieces
  • Add to the pan and fry for three minutes
  • Return the chicken to the pan
  • Add the water and pasta sauce
  • Reduce the heat, cover and simmer for thirty to forty minutes until the chicken is cooked.
