Tomato and Thyme Fish Zakouski

White fish served in a simple tomato sauce which is quick and easy to make and is low in saturated fat. This was served in pre-cooked pastry shells which were warmed in the oven, it can also be served as a main course with potatoes.

Ingredients

  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1 onion
  • 400 g can chopped tomatoes
  • 1 tsp light soft brown sugar
  • 1 tbsp fresh thyme
  • 1 tbsp soy sauce
  • 4 fillets cod or other white fish

Instructions

  • Heat the olive oil in a frying pan
  • Chop the onion and garlic into small pieces and fry until soft
  • Add the tomatoes, sugar, soy sauce and thyme and bring to the boil. Simmer for five minutes.
  • Add the fish and cook gently for 8 minutes until the fish is cooked and flakes easily
  • Flake the fish and add the mixture into the warmed zakouski cases to serve.
