Tomato and Thyme Fish Zakouski
White fish served in a simple tomato sauce which is quick and easy to make and is low in saturated fat. This was served in pre-cooked pastry shells which were warmed in the oven, it can also be served as a main course with potatoes.

- 1 tbsp olive oil
- 2 cloves garlic
- 1 onion
- 400 g can chopped tomatoes
- 1 tsp light soft brown sugar
- 1 tbsp fresh thyme
- 1 tbsp soy sauce
- 4 fillets cod or other white fish
Heat the olive oil in a frying pan
Chop the onion and garlic into small pieces and fry until soft
Add the tomatoes, sugar, soy sauce and thyme and bring to the boil. Simmer for five minutes.
Add the fish and cook gently for 8 minutes until the fish is cooked and flakes easily
Flake the fish and add the mixture into the warmed zakouski cases to serve.
