Peel and chop the onion into small pieces.
Heat the oil and gently fry the onion.
Chop the celery and courgettes.
De-seed and chop the red peppers.
Add the rest of the vegetables to the pan, cover and heat until soft.
Remove from heat and sprinkle over the herbs and Tabasco.
Season with salt and pepper.
Place some of the vegetables in a casserole dish, sprinkle with grated cheese, add the rest of the vegetables and the rest of the cheese.
Cook under a grill until the cheese melts.
