Layered Cheesy Vegetables

Ingredients

  • 1 tbsp sunflower oil
  • 1 onion
  • 4 sticks celery
  • 1 lb 450 g courgettes
  • 1 red peppers
  • 1 tsp mixed herbs
  • 2-3 drops Tabasco
  • Salt and black pepper
  • 6 oz 175 g cheese

Instructions

  • Peel and chop the onion into small pieces.
  • Heat the oil and gently fry the onion.
  • Chop the celery and courgettes.
  • De-seed and chop the red peppers.
  • Add the rest of the vegetables to the pan, cover and heat until soft.
  • Remove from heat and sprinkle over the herbs and Tabasco.
  • Season with salt and pepper.
  • Place some of the vegetables in a casserole dish, sprinkle with grated cheese, add the rest of the vegetables and the rest of the cheese.
  • Cook under a grill until the cheese melts.
