Minced Beef Hash

Minced beef hash is a one pot meal with mince, potatoes and vegetables. Perfect for an easy midweek meal

Ingredients

  • 500 g minced beef
  • 2 beef stock cubes
  • 400 g tin tomatoes
  • 2 stalks celery
  • 1 onion
  • 2 cloves garlic
  • 5 mushrooms
  • 2 carrots
  • 4 potatoes
  • 400 ml water
  • 1 tsp mixed herbs
  • salt and pepper

Instructions

  • Chop up the onions, garlic, celery and mushrooms
  • Add them to a pan with a little oil and heat until soft.
  • Add the mince and brown
  • Add the tomatoes, stock cubes and water and bring to the boil. Simmer for 20 minutes. Season with salt and pepper
  • Preheat the oven to 200 C, 400 F, Gas Mark 6
  • Chop the carrots and potatoes into small chunks and add to another pan. Cover with boiling water and simmer for five minutes.
  • In a casserole dish add the drained vegetables and minced beef mixture and mix up.
  • Bake in the oven for 30 minutes
