Minced Beef Hash
Minced beef hash is a one pot meal with mince, potatoes and vegetables. Perfect for an easy midweek meal

- 500 g minced beef
- 2 beef stock cubes
- 400 g tin tomatoes
- 2 stalks celery
- 1 onion
- 2 cloves garlic
- 5 mushrooms
- 2 carrots
- 4 potatoes
- 400 ml water
- 1 tsp mixed herbs
- salt and pepper
Chop up the onions, garlic, celery and mushrooms
Add them to a pan with a little oil and heat until soft.
Add the mince and brown
Add the tomatoes, stock cubes and water and bring to the boil. Simmer for 20 minutes. Season with salt and pepper
Preheat the oven to 200 C, 400 F, Gas Mark 6
Chop the carrots and potatoes into small chunks and add to another pan. Cover with boiling water and simmer for five minutes.
In a casserole dish add the drained vegetables and minced beef mixture and mix up.
Bake in the oven for 30 minutes
