Preheat the oven to 200C, fan 180C, gas mark 6
Chop the mushrooms, peppers and cherry tomatoes into small pieces.
Grate the cheese.
Pop the pitta bread in the toaster for a minute then leave to cool. Cut the pittas in half using a knife.
Spread the tomato purée over the pitta halves then add the mushrooms, peppers, sweetcorn, tomatoes and cheese.
Cook on a baking tray in the oven for 10-12 minutes until the cheese has melted.
Serve with shredded iceburg lettuce
