Simple Tomato Soup

  • 2 cloves of garlic
  • 2 carrots
  • 2 onions
  • 2 sticks of celery
  • 1 tins plum tomatoes
  • 6 large tomatoes
  • 1.5 litres vegetable stock
  • salt and pepper to season
  • fresh basil


  • Peel and slice the carrots, onions, garlic and celery.
  • Place in a large pan with some olive oil. Cook gently until soft.
  • Add the tomatoes, tinned tomatoes and vegetable stock.
  • Bring to the boil and simmer until the vegetables are soft.
  • Using a blender blend the mixture until smooth.
  • Put back in the pan and season with salt and pepper and garnish with basil
