Halloween Pumpkin Soup

  • 1 onion
  • 2 potatoes
  • 2 cloves garlic
  • 1 large pumpkin
  • 1 litre vegetable stock
  • olive oil
  • salt and pepper to season
  • garlic and chilli flakes to season


  • Peel and chop the onions, garlic, potatoes and pumpkin.
  • Place some oil in a large pan and add the onions and garlic.
  • Gently cook the onions and garlic until soft.
  • Add the potatoes, pumpkin and stock and bring to a simmer.
  • Simmer until the potatoes and pumpkin are soft.
  • Use a blender to blend the mixture until it is smooth.
  • Add salt, pepper and garlic and chilli flakes to season
