White Chocolate and Strawberry Mousse

  • 150 g white chocolate
  • 4 egg whites
  • 70 g caster sugar
  • 160 ml double cream
  • a handful of strawberries


  • In a bowl beat the cream until thick
  • In another bowl mix the egg whites until they form peaks
  • Add half the sugar to the egg whites and mix until it dissolves.
  • Add the rest of the sugar and beat until the mixture looks glossy.
  • Fold in the cream and beat until thick
  • Melt the chocolate in a bowl over a pan of boiling water
  • Fold the chocolate into the mixture.
  • Chop the strawberries and add to the bottom of the mousse bowl.
  • Add some of the mousse, some more strawberries and some more mousse.
  • Decorate with strawberries or chocolate
  • Place in the fridge for an hour until set
