Maltese Pork and Sausage Stew

Ingredients

  • 4 Maltese sausages
  • 3 pork steaks
  • 1 onion
  • 1 carrot
  • 1 potato
  • 1 stalk of celery
  • 2 tbsp tomato purée
  • 800 ml chicken stock
  • 100 g flour
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp paprika
  • salt and pepper

Instructions

  • Mix the flour and the spices together
  • Chop the sausage and pork into pieces and coat in the flour
  • Add some olive oil to a pan and warm.
  • Fry the sausage and pork until browned then set aside.
  • Chop the onion, potato, celery and carrots and fry for a couple of minutes.
  • Add the sausage and pork back into the pan with the tomato purée.
  • Add the stock and simmer until the vegetables are soft, stirring frequently.
