American Pancakes with Maple Baked Bacon

  • 200 g 7oz self raising flour
  • tsp baking powder
  • 1 tbsp golden caster sugar
  • 3 large eggs
  • 200 ml 7 fl oz milk
  • Butter
  • For the maple baked bacon
  • Back bacon slices
  • Maple syrup


  • For the maple baked bacon
  • Cut the fat off the bacon and place on a baking tray lined with silver foil.
  • Heat the oven to 180C and place the bacon in the oven for around 15 minutes until crispy.
  • Drizzle with a little maple syrup and heat for five minutes more.
  • For the pancakes
  • Sift together the flour, baking powder, sugar in a bowl.
  • Make a well in the centre and add the eggs and milk.
  • Whisk until you have a smooth batter.
  • Melt some butter in a frying pan.
  • When it is foaming pour rounds of batter into the pan, making pancakes about 5 cm wide.
  • Leave space between them so they can expand.
  • When the bottom is golden flip and cook the other side.
  • Keep warm on a baking tray in the oven until they are all cooked
  • Serve drizzled with maple syrup with the bacon
