Lemon and cumin lamb fajtias

Ingredients

  • To slow cook the lamb
  • 1 kg leg of lamb
  • 2 tbsp olive oil
  • 3 tbsp lemon juice
  • 2 cloves garlic
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 3 tsp paprika
  • For the fajitas
  • Chopped up lamb
  • 1 onion
  • 100 g mangetout
  • 100 g baby corn
  • 1 red pepper
  • 2 tbsp lemon juice
  • 3 tsp cumin
  • 2 tsp paprika
  • 2 tsp ginger
  • 2 tsp cinnamon
  • Fajita wraps

Instructions

  • Place the leg of lamb in the slow cooker
  • Peel and crush the garlic and add it with the rest of the ingredients.
  • Roll the lamb leg round so it is covered in the spices.
  • Cook on high for about seven hours until the lamb shreds easily.
  • For the fajitas
  • Shred the lamb
  • Peel and chop the onion, chop the red pepper and baby corn into pieces
  • Heat some oil in a pan and cook the onion, red pepper, mangetout and baby corn.
  • Add the lamb, spices and lemon juice and ensure the lamb is covered in the spices
  • Place the lamb into the fajita wraps
