Cod with chorizo

  • 4 cod fillets
  • 100 g chorizo
  • 100 g button mushrooms
  • 1 400 g tin chopped tomatoes
  • 1 tsp chilli
  • 1 tbsp Olive oil


  • Preheat the oven to 200c, Gas Mark 6
  • Chop the chorizo into small pieces and chop the mushrooms in half
  • Place the cod fillets in an ovenproof dish
  • Add the olive oil to a pan
  • Add the mushrooms and chorizo and cook gently for a few minutes
  • Pour in the tomatoes and add the chilli powder and bring to the boil
  • Pour the sauce over the cod fillets
  • Bake in the oven for 30 minutes.
