Californian Chicken

  • 1 tbsp vegetable oil
  • 4 chicken breasts
  • 1 onion
  • 1 yellow pepper
  • 3 tbsp lime juice
  • 1 tsp finely grated lime rind
  • 1 clove garlice
  • 1 tbsp clear honey
  • 150 ml hot chicken stock


  • Peel and chop the onion and garlic. Crush the garlic clove.
  • Remove the seeds from the pepper and cut into thin strips
  • Heat the oil in a pan. Add the chicken and cook for five minutes until browned.
  • Place the chicken on a warm plate and cover with foil
  • Add the onion, yellow pepper, lime juice, lime rind, garlic, honey, black pepper and half the stock to the pan.
  • Cook for five minutes on a medium heat stirring constantly
  • Add the chicken back into the pan with the remaining stock
  • Cover and cook for ten minutes until the chicken is cooked though
