Peel and grate the carrot
Chop the red pepper into strips
Chop the chicken into pieces
Fry the chicken in a pan and when nearly cooked add the fajita seasoning, pepper, carrot and jalapeño pepper.
In an ovenproof dish fill the tortillas adding some salsa inside each one.
Sprinkle with grated cheese and pumpkin seeds
Bake at 175C, Gas Mark 4 for five minutes until the cheese melts
