Chicken and pumpkin seed fajitas

  • 1 sachet Santa Maria fajita seasoning
  • 3 chicken breasts
  • 1 red pepper
  • 2 carrots
  • 1 jar Santa Maria salsa
  • 1 jar jalapeño peppers
  • 1 packet totillas
  • 200 g cheese
  • 50 g pumpkin seeds


  • Peel and grate the carrot
  • Chop the red pepper into strips
  • Chop the chicken into pieces
  • Fry the chicken in a pan and when nearly cooked add the fajita seasoning, pepper, carrot and jalapeño pepper.
  • In an ovenproof dish fill the tortillas adding some salsa inside each one.
  • Sprinkle with grated cheese and pumpkin seeds
  • Bake at 175C, Gas Mark 4 for five minutes until the cheese melts
