Bacon and Egg bagels

Maple bagels topped with an avocado spread, grilled bacon and a fried egg. Made to look like an eyeball for a Halloween snack

Ingredients

  • 4 New York Bakery Co Maple Bagles
  • 2 avocados
  • 1 lemon, juiced
  • 8 cherry tomatoes
  • 8 rashers of bacon
  • 4 eggs
  • 1 tbsp mayonnaise
  • black pepper to season

Instructions

  • Chop the fat from the bacon and place on a foil lined baking tray
    Turn the oven on to 180C Gas Mark 4
    Place the bacon in the oven for ten minutes until crisp
    Mash the avocado with the lemon juice and mayonnaise
    Add some black pepper for seasoning.
    Fry the eggs until they are cooked but the centre is runny. Use an egg ring to keep them round
    Toast the bagels
    Spread with the avocado mixture, add two slices of bacon and the egg on top. Place the top of the bagel so the yolks shows though the hole.
