Lentil soup

The easy lentil soup is perfect for a chilly day

Ingredients

  • 1 onion
  • 1 carrot
  • 2 sticks celery
  • 250 g lentils
  • 700 ml water
  • ½ tsp tumeric
  • ½ tsp cumin
  • ½ tsp corriander

Instructions

  • Peel the onion and carrot
  • Chop the onion, carrot and celery into small pieces
  • Add a little oil to a pan and heat on a low temperature
  • Add the onions, carrot and celery and cook gently until soft
  • Add the lentils, water and spices and simmer for around twenty minutes until thick

Notes

Serve with crusty bread. Why not double the recipe and make a big pan to do the week?
