Pan Haggerty recipe

Pan haggerty is a traditional Northumbrian side dish containing potatoes, onion and cheese. It is cooked in one pan.

  • 2 tbsp oil
  • 450 g potatoes
  • 225 g onions
  • 100g grated cheese
  • salt and black pepper to season


  • Peel and thinly slice the potatoes and onions
  • Heat the oil or dripping in a large frying pan.
  • Add the potatoes to the base of the pan and season with salt and pepper.
  • Layer the onions on top of the potatoes
  • Sprinkle the grated cheese over the top and cook slowly for 30 minutes.
  • Place the pan under a grill and cook until the cheese is brown and bubbling.
