Pan Haggerty recipe
Pan haggerty is a traditional Northumbrian side dish containing potatoes, onion and cheese. It is cooked in one pan.
Servings: 4 people
- 2 tbsp oil
- 450 g potatoes
- 225 g onions
- 100g grated cheese
- salt and black pepper to season
Peel and thinly slice the potatoes and onions
Heat the oil or dripping in a large frying pan.
Add the potatoes to the base of the pan and season with salt and pepper.
Layer the onions on top of the potatoes
Sprinkle the grated cheese over the top and cook slowly for 30 minutes.
Place the pan under a grill and cook until the cheese is brown and bubbling.
