For the maple baked bacon
Cut the fat off the bacon and place on a baking tray lined with silver foil.
Heat the oven to 180C and place the bacon in the oven for around 15 minutes until crispy.
Drizzle with a little maple syrup and heat for five minutes more.
For the pancakes
Sift together the flour, baking powder, sugar in a bowl.
Make a well in the centre and add the eggs and milk.
Whisk until you have a smooth batter.
Melt some butter in a frying pan.
When it is foaming pour rounds of batter into the pan, making pancakes about 5 cm wide.
Leave space between them so they can expand.
When the bottom is golden flip and cook the other side.
Keep warm on a baking tray in the oven until they are all cooked
Serve drizzled with maple syrup with the bacon
