Combine the taco seasoning mix with the lime juice and honey in a baking dish.
Cut the beef into strips and add to the baking dish. Stir and leave to marinade for 15 minutes at room temperature.
To make the salsa, peel the avocado remove the stone and chop into pieces. Peel and chop the onion and chop the tomato. Combine in a bowl with the lime juice.
Heat the oil in a pan. Add the beef and marinade and cook until done. Remove from pan and leave to rest.
Add the red pepper and onions to the pan and cook until soft.
Place the beef back in the pan and cook for one minute.
Warm the tortillas in the microwave for 45 seconds.
Add the beef to the middle of each tortilla, top with salsa and sour cream.
