Peel and chop the onion and garlic. Crush the garlic clove.
Remove the seeds from the pepper and cut into thin strips
Heat the oil in a pan. Add the chicken and cook for five minutes until browned.
Place the chicken on a warm plate and cover with foil
Add the onion, yellow pepper, lime juice, lime rind, garlic, honey, black pepper and half the stock to the pan.
Cook for five minutes on a medium heat stirring constantly
Add the chicken back into the pan with the remaining stock
Cover and cook for ten minutes until the chicken is cooked though
