Melt the butter in a pan.
Cut the chicken breasts into pieces and cook in the butter to brown them
Peel and chop the onion and garlic and add to the butter. Cook gently until soft.
Add the tomatoes, herbs, wine, paprika, Cajun seasoning, lemon juice and stock.
Bring to a simmer and allow to cook until the chicken is tender.
Mix the cornflour with water to form a paste and add to the pan to thicken the juice.
