Goat's Cheese, Apple and Onion Tart

Servings: 4 people

Ingredients

  • 320 g pack puff pastry
  • 1 tbsp olive oil
  • 2 large onions
  • 2 tbsp balsamic vinegar
  • 1 tsp mustard
  • 2 eating apples
  • Goat's cheese
  • 100 g chutney

Instructions

  • Preheat the oven to 200C, Gas Mark 6
  • Roll out the pastry and place on a baking sheet covered with baking parchment.
  • Score the pastry with a criss cross pattern
  • Bake for 15 minutes
  • Peel and chop the onions
  • Heat the oil in a pan and cook the onions for 10-15 minutes until soft and beginning to caramelise.
  • Add the vinegar and mustard and simmer for a minute. Set aside
  • Slice the apple across the middle into circles, removing any seeds
  • Push down the middle of the pastry and spread the onion mixture on top
  • Add the apples, dollops of chutney and grate the cheese over the top
  • Place back in the oven for 25 minutes until the apple is soft and the cheese bubbling.
  • Serve warm or cold
