Goats’ cheese, spring onion and garlic stuffed mushrooms

Ingredients

  • 4 portobelllo mushrooms
  • 1 clove garlic
  • 2 spring onions
  • grated goats' cheese

Instructions

  • Preheat the oven to 200C Gas Mark 4
  • Remove the stems from the mushrooms and place on a baking tray
  • Drizzle with olive oil and season with salt and black pepper
  • Place in the oven for fifteen minutes until soft.
  • Chop the mushroom stems and add to a bowl.
  • Peel and crush the garlic and chop the spring onions into small pieces
  • Add to the bowl.
  • Grate enough goats cheese to fill the mushrooms and mix up with the onion and mushroom mixture.
  • Add the mixture to the middle of the mushrooms and cook in oven until the cheese melts.
