Preheat the oven to 200C Gas Mark 4
Remove the stems from the mushrooms and place on a baking tray
Drizzle with olive oil and season with salt and black pepper
Place in the oven for fifteen minutes until soft.
Chop the mushroom stems and add to a bowl.
Peel and crush the garlic and chop the spring onions into small pieces
Add to the bowl.
Grate enough goats cheese to fill the mushrooms and mix up with the onion and mushroom mixture.
Add the mixture to the middle of the mushrooms and cook in oven until the cheese melts.
