Italian Tomato Baked Cod

Ingredients

  • 4 cod steaks
  • 400 g tin chopped tomatoes
  • 1 onion
  • 1 red pepper
  • Juice and zest of 1 lime
  • 2 cloves garlic
  • 2 tsp rosemary
  • 1 tsp paprika
  • 1 tsp chilli powder
  • 70 ml white wine
  • 1 tbsp olive oil
  • salt and black pepper to season

Instructions

  • Preheat the oven to 200C Gas Mark 6
  • Place the cod fillets in a baking dish.
  • Peel and chop the onion and garlic.
  • Chop the red pepper into small pieces, discarding the pips
  • Add the olive oil to a pan and fry the onions and garlic until soft then add the pepper.
  • Cook for a couple of minutes then add the tomatoes, wine, lime juice and zest, paprika, chilli powder and rosemary. Season with salt and pepper.
  • Cook gently for ten minutes.
  • Pour the sauce over the fish and bake in the oven for 15 -20 minutes until the fish is cooked
