Jam Drops

Ingredients

  • 125 g butter
  • 110 g caster sugar
  • 1 egg
  • 120 g ground almonds
  • 150 g plain flour
  • Raspberry jam
  • Lemon curd

Instructions

  • Preheat the oven to 180C 350F Gas Mark 4
  • Line a baking tray with baking parchment
  • Mix the butter and sugar until fluffy.
  • Add the vanilla essence and almonds and mix
  • Beat in the egg and the flour.
  • Knead into a dough and roll into balls and flatten them.
  • Place on a baking tray.
  • Use the end of wooden spoon to make holes in a flower shape in the biscuits for the jam.
  • Place the lemon curd in the hole in the centre.
  • Place the raspberry jam round the edges.
  • Bake for around 15 minutes until golden.
