Preheat the oven to 180C 350F Gas Mark 4
Line a baking tray with baking parchment
Mix the butter and sugar until fluffy.
Add the vanilla essence and almonds and mix
Beat in the egg and the flour.
Knead into a dough and roll into balls and flatten them.
Place on a baking tray.
Use the end of wooden spoon to make holes in a flower shape in the biscuits for the jam.
Place the lemon curd in the hole in the centre.
Place the raspberry jam round the edges.
Bake for around 15 minutes until golden.
