Panaculty

Panaculty is a dish that uses left-over beef, corned beef and root vegetables for a delicious and tasty mid-week meal

Equipment

  • Sharp knife
  • Measuring Jug
  • Casserole dish
  • potato peeler
  • teaspoon

Ingredients

  • Two onions
  • 200 g corned beef
  • left over roast beef or lamb
  • 1 carrot
  • 1 parsnip
  • small turnip
  • 2 large potatoes
  • 500 ml beef stock
  • 2 tsp cornflour
  • Salt and pepper to season

Instructions

  • Preheat the oven to 180C Gas mark 4
  • Peel and chop the onions, carrot, parsnip and turnip into small pieces
  • Add them to the casserole dish with the meat
  • Peel the potatoes and chop them into thin slices
  • Place the slices of potato over the meat and vegetable mixture
  • Mix the cornflour with the stock and pour over the top of the dish
  • Bake in the oven for an hour until the potatoes are brown
