Paprika Pork

Ingredients

  • 500 g pork
  • 1 onions
  • 1 red pepper
  • 1 garlic clove
  • 1 tbsp paprika
  • ½ tsp caraway seeds
  • 400 g tin tomatoes
  • 75 g tomato purée
  • 1 tbsp white wine vinegar
  • 50 ml water
  • ½ tsp dried oregano

Instructions

  • Preheat the oven to 150C, Gas Mark 2
  • Chop the pork into pieces.
  • Add some oil to a pan and brown the pork. Set aside.
  • Peel and chop the onion and garlic.
  • Chop the pepper into pieces and remove the seeds
  • In the pan gently fry the onion until soft.
  • Add the pepper and garlic and fry for another minute
  • Return the pork to the pan with the paprika and caraway seeds
  • Add the tomatoes, tomato purée, vinegar and water. Bring to a simmer.
  • Place in a casserole dish in the oven for an hour and a half to two hours. Add a little water after an hour if needed
