Preheat the oven to 150C, Gas Mark 2
Chop the pork into pieces.
Add some oil to a pan and brown the pork. Set aside.
Peel and chop the onion and garlic.
Chop the pepper into pieces and remove the seeds
In the pan gently fry the onion until soft.
Add the pepper and garlic and fry for another minute
Return the pork to the pan with the paprika and caraway seeds
Add the tomatoes, tomato purée, vinegar and water. Bring to a simmer.
Place in a casserole dish in the oven for an hour and a half to two hours. Add a little water after an hour if needed
