Autumn is here and with it the mornings are getting colder. The perfect start to a cold day is a warm breakfast. A breakfast that fills you up and stops you reaching for a chocolate bar mid morning. Eggs baked in avocado is the ideal breakfast. Full of heart healthy fatty acids and a high protein count this is a low sugar and fibre full breakfast to get you going. It is a great addition to a paleo diet.
My other go to breakfast on cold days is porridge, the oats provide a slow release energy that keeps you full all morning.

Eggs baked in avocado
Are your mornings always a rush? Eggs baked in avocado are easy to fit into the morning routine. They require few ingredients and next to no preparation time. Just scoop out a little of the avocado, break an egg into it, season and pop into the oven. You can then get on with other things for fifteen minutes. Then remove from the oven and enjoy.
A warm avocado is actually pretty special. The taste is more smoky and delicious. When the runny yolks mix with it there is taste sensation that you just have to enjoy. The warm creamy texture ideal for breakfast in the colder months.
Why not serve with some bacon, mushrooms and tomato for a bigger breakfast? You can cook these all in the oven and save time. For a more leisurely Sunday brunch add some smoked salmon instead.

Avocado is a fruit not a vegetable. They contain high levels of vitamin E, iron and potassium. They are high in fat but it is the type of fat that is good for you. The type that helps to lower cholesterol. Eggs are a budget friendly high quality protein and are perfect paired with avocado for this breakfast.
Avocados only grow in tropical or sub-tropical climates and are not native to the UK. They are commonly grown in Florida and South America. Here they are often known as Alligator Pears due to the shape and leathery appearance of the skin. The fruits only ripen after harvesting.

Baked Eggs in Avocado
Ingredients
- 1 avocado
- 2 eggs
- salt and pepper
Instructions
- Preheat the oven to 220C Gas Mark 7
