The type that helps to lower cholesterol. Eggs are a budget friendly high quality protein and are perfect paired with avocado for this breakfast.

Avocados only grow in tropical or sub-tropical climates and are not native to the UK. They are commonly grown in Florida and South America. Here they are often known as Alligator Pears due to the shape and leathery appearance of the skin. The fruits only ripen after harvesting.

Baked Eggs in Avocado

Ingredients

  • 1 avocado
  • 2 eggs
  • salt and pepper

Instructions

  • Preheat the oven to 220C Gas Mark 7
    Cut the avocado in half and scoop out a little flesh
    Place on a baking tray
    Crack the egg and pour gently into the hole in the avocado
    Bake for 15 minutes until the egg is set and the yolk runny
    Season with salt and pepper
