White Chocolate and Strawberry Mousse
At Christmas I am always looking for desserts that look and taste special as well as being delicious. When Hotel Chocolat sent me their Christmas chocolate H box selection to try I thought these would make ideal decorations for a mousse dessert, as well as being lovely to eat straight from the box with a coffee. The box contains 14 festive chocolates, including the Christmas Eton Mess, Mulled Wine Truffles, Caramel Supernova, Christmas Gianduja, and Caramel Christmas Tree. As well as looking pretty they taste gorgeous. I managed to hide the box and set about making a white chocolate and strawberry mousse with the plan to decorate it with the chocolates.
I chose white chocolate and strawberry mousse as I thought that the white chocolate would make a great contrast with the Hotel Chocolat decorations. I added strawberries in order to convince myself that I was making a healthy dessert. The strawberry goes brilliantly with the white chocolate and there are plenty in the shops due to the unseasonably warm weather.
Browsing though the Hotel Chocolat Christmas H box I thought that the star shaped chocolates would work best on the top of the mousse. They did look rather pretty balanced there as well as tasting lovely.
The mousse was lovely and tasted delicious, the only problem is that it needs to go into the fridge to set for a little while. My son was desperate to try the mousse (and the chocolates) so I had to stand watch until it was ready. Luckily the recipe makes loads so I was able to let him lick out the bowl while he was waiting. The mousse is well worth the wait and would be a perfect end to a festive meal. It is also quite easy to make, the only hard part is doing all the whisking. Egg whites always seem to take forever to whisk up for some reason. If you don’t fancy white chocolate then the Hotel Chocolat chocolates would also work really well with vanilla mousse.
White Chocolate and Strawberry Mousse

White Chocolate and Strawberry Mousse
Ingredients
- 150 g white chocolate
- 4 egg whites
- 70 g caster sugar
- 160 ml double cream
- a handful of strawberries
Instructions
- In a bowl beat the cream until thick
- In another bowl mix the egg whites until they form peaks
- Add half the sugar to the egg whites and mix until it dissolves.
- Add the rest of the sugar and beat until the mixture looks glossy.
- Fold in the cream and beat until thick
- Melt the chocolate in a bowl over a pan of boiling water
- Fold the chocolate into the mixture.
- Chop the strawberries and add to the bottom of the mousse bowl.
- Add some of the mousse, some more strawberries and some more mousse.
- Decorate with strawberries or chocolate
- Place in the fridge for an hour until set

These look really festive and very tasty! Perfect alternative to the heavy Christmas pudding, though I love Christmas pudding but usually eat it on Boxing day!
I love Christmas pudding as well but it is nice to have an alternative as some people are not keen

I am not a massive fan of white chocolate myself, but my husband is. I think I might surprise him with this for dessert one night. I know he would appreciate it.
I prefer milk as well but the white chocolate actually works well with the strawberries.
