Sticky Chicken and Sweet Potato Tray Bake is an easy to prepare meal that is perfect for midweek. Just put everything on a tray and leave to cook in the oven.
There is nothing worse after an enjoyable weekend or a holiday than going back to work. It is hard to get back into the routine. Instead of waking up naturally you are woken by the alarm. It is so tempting to turn it off and snuggle back under the covers but you have to get up and face the cold.
The morning routine is again a frantic time, trying to get everything ready and ensure everyone has everything they need before they leave.
Evenings are just as bad. You come in after a long day at work and everyone is hungry. Food needs to be easy and quick to prepare so it is on the table quickly. The last thing you want to do is spend a lot of time in the kitchen preparing a meal.
McCain have just launched a new ‘Back to Normal’campaign along with Holly Bell at Recipes from a Normal Mum. The campaign aims to get mums and dads back into the full swing of their routine with a selection of recipes that are quick and easy to make for midweek dinners. They sent me though a Back to Normal pack with an oven glove, serving tongs, enamel plates and an egg timer along with a voucher to enable me to purchase some ingredients to make a recipe.
When shopping in Iceland I discovered that McCain now do crispy sweet potato fries, along with all their other products. I decided to use these in a recipe as they looked tasty and created a sticky chicken and sweet potato tray bake.
Freezers are so handy at times when it comes to putting together a quick and easy meal. Not only can you freeze leftovers to use another day, you can also stock up on frozen chicken fillets and vegetables which are perfect for putting together for a quick and easy meal. For this recipe I made use of the McCain sweet potato fries, along with some frozen peppers and frozen chicken fillets. I also added some chopped up onion and garlic. I made the chicken fillets more interesting by coating them in a sticky sauce made from ketchup, brown sugar and soy sauce. I also added a little grated ginger root. Did you know you can freeze ginger root? I only learnt that recently and now have one in my freezer and I can grate bits when needed. I used to get annoyed that recipes only used a little bit of ginger root and the rest would get wasted, until I discovered this.
The recipe is so quick and easy to make. Whisk the sauce up in a jug, coat the chicken, add everything to the tray and bung in the oven until cooked. Meat, sweet potato and vegetables all on one tray. A quick and delicious meal and even better while it cooks you can get on with other things. The perfect meal for a busy school night.

Sticky chicken and sweet pototo tray bake
Ingredients
- 150 ml tomato ketchup
- 60 g dark brown sugar
- 60 ml light soy sauce
- 1 tsp ground ginger
- about 12 mini chicken breast fillets
- 1 onion chopped
- 250 g frozen peppers
- ½ bag McCain sweet potato fries
- 2 cloves garlic
- 2 tsp paprika
- a sprinkle of lemon juice
- black pepper
Instructions
- Preheat the oven to 200C
- Whisk the ketchup, brown sugar, soy sauce and ginger together in a jug. Coat the chicken in the sauce and place on a baking tray.
- Peel and chop the garlic and onion and sprinkle on the baking tray.
- Add the frozen peppers and the McCain sweet potato fries.
- Sprinkle over the paprika, black pepper and a dash of lemon juice
- Bake for around 25 minutes until the chicken is cooked
If you are looking for other recipes to make with chicken then this chicken one pot curry is tasty and simple. Chicken with yellow bean sauce and fried rice is also tasty and quick to make.
