Chicken Supreme Recipe

Chicken Supreme is one of those recipes that was popular in the eighties but seems to have fallen out of favour recently. This is a shame because when cooked well it is tasty and flavourful. Mouthfuls of tender chicken mixed with bacon and cream work so well together giving a burst of flavour with every mouthful. Chicken Supreme is also a lovely warming meal which is ideal for these colder Autumn days when the leaves lie abandoned on the floor. The perfect meal for when you come home cold from jumping in piles of leaves and searching the hedgerows for conkers.
Autumn has been mild this year but the cold mornings and evenings are now firmly setting in. Tendrils of fog drift across the fields in the mornings, reaching their cold fingers under your clothes trying to chill you. Evenings are darker and crisp with a large full moon hanging in the sky, looking near enough to touch. The odd firework streaks across the night sky, filling the dark with showers of sparks. The air smells of smoke, from bonfires and wood fires in the home. It is the perfect time to be making comforting warming dishes that make you feel warm and safe. Chicken supreme has this effect, it takes a little time to make but the effort is worth it. Sitting down to a delicious dinner on a cold night is all the reward you need.
How to make Chicken Supreme
The meal itself if simple enough to make, just cook chopped garlic and onion in a pan until soft then set aside. Chop up some bacon and fry it gently and then set it aside while the chopped chicken is cooked. The onion, garlic and bacon are added back into the pan and cooked with the chicken. Finally some chicken stock and cream are added to make a delicious creamy sauce. The final dish can be served with rice and a side salad or mashed potato for a more filling meal.
The chicken supreme was well received by all the family, it is a dish I will have to make again soon. Empty plates are a way of telling that it was a success as well as demands for more.

Chicken Supreme
Ingredients
- 2 onions
- 4 cloves of garlic
- 6 rashers of bacon
- 3 chicken breasts
- 100 ml chicken stock
- 400 ml double cream
Instructions
- Peel and chop the onion and garlic and cook gently in a pan until soft. Set aside
- Chop the bacon into pieces and cook in the pan until done, set aside
- Chop the chicken into pieces, cook in pan until cooked though.
- Return the bacon, onions and garlic to the pan.
- Add the stock and cream and stir until the chicken and bacon is well coated.
