The start of Autumn is bringing colder weather. Nature seems to know it is Autumn. The leaves in the trees are starting to change colour. Soon they will be falling and winter will be on the way. In Autumn I always make soup for the family. What is more comforting on a cold day than a steaming bowl of soup with crusty bread?
There are some soups that everyone loves. Tomato soup is one of these classic recipes. The other is mushroom soup. With its warm earthy flavours it is the perfect soup for keeping the cold at bay.

Quick and Easy Home Made Mushroom Soup
Can you believe some people wonder what goes into mushroom soup? You think the name would give it away. I kept this soup simple. The main ingredient is mushrooms. An onion, a couple of cloves of garlic and a couple of sticks of celery add a depth of flavour. A little thyme and parsley also bring out the taste of the mushrooms. Chop them all up and boil in chicken stock or vegetable stock. When the mushrooms are soft put into a food processor for a couple of minutes. Finally stir in a little cream.
If you have recently done a roast chicken it is worth keeping the carcass to make your own stock. Just boil up the bones with a chopped up onion, some carrots and herbs for a couple of hours. Strain out the bones and leave to cool. When ready cool skim off the fat. It is a great way to prevent food waste and adds more flavour to the soup. I found one chicken creates about a pint (half a litre) of stock. You will have to supplement it with stock cubes as the recipe requires more stock.
The result is a tasty and delicious mushroom soup that is really easy and quick to make. It is the perfect dish for Autumn as wild mushrooms are in season in September. Make sure you know what you are picking though if you do pick your own.

It is always useful to have a good food processor or blender when making soup. I have been trying out the Von Shef 750W food processor recently. This is a great food processor that helps out with all sorts of jobs in the kitchen. It has every attachment you would ever need.
The blender attachment is perfect for making soup and it holds 1.8 litres of liquid. This is more than sufficient for most soup recipes. The mixing bowl holds 2 litres which again is a generous size. Use the dough attachment to knead dough or just chop, mix, slice or grate with the other attachments. I had great fun grating cheese. With a normal grater I always grate my fingers but that is no longer a problem. If you want to make fresh juice just use the juicer attachment.
Cleaning the food processor is easy. All the parts detach and are easy to clean. They are dishwasher safe so no need to wash by hand. It is the perfect gadget for helping out in the kitchen.
