Tuna, Sweetcorn and Tomato Pasta
It’s the end of the month and at this point I usually start to look for ways to use up the things in my store cupboard. I always tend to buy lots of tins of different things and pasta at the start of a month and these always come in useful. My son actually did a count the other day and asked me why I had fifteen tins of baked beans. I had no answer but I know that in the event of a zombie apocalypse or a major disaster I could probably survive for a while.

Some things that I always have in are tins of tomatoes, tins of tuna and tins of sweetcorn. These come in handy for many different things but as a student I learnt that tuna and sweetcorn pasta was a really nice meal. Tuna, Sweetcorn and Tomato Pasta is even nicer.
This is how I make it.
Tuna, Sweetcorn and Tomato Pasta
Ingredients
- 1 onion
- about 4 mushrooms, depending on taste
- 1 small can sweetcorn (150g)
- 1 can tomatoes (400g)
- 2 tbsp tomato puree
- 1 tin tuna (185g)
- 300g penne or other pasta
- 2 tsp mixed herbs
- Grated cheese
Method
- Cook the pasta in boiling water until it is ready.
- While it is cooking in another pan warm some oil and add the chopped onion and the mushrooms. Cook till soft.
- Add the tin of tomatoes, sweetcorn and tomato purée to the pan and warm though.
- Add the tuna and herbs to the tomato sauce and cook until warm.
- Put the cooked pasta into a casserole dish and pour the sauce over the top.
- Stir the sauce though the pasta, sprinkle with grated cheese and black pepper and put under a grill until the cheese melts.

This is lovely served with salad or vegetables if you prefer. It also makes a very quick and easy meal which is enjoyable. My son loved it and kept demanding more which is always a good sign.
