Fish Stew Recipe

I thought the other day that I really do not cook using fish often enough. I think the reason is that it is quite hard to get fish, we do not have a local fishmonger and the supermarket has a very limited selection. It is a shame as we are an island nation so the one thing we should be able to eat is fish. Fish is also very good for you and I would definitely like to experiment more with fish recipes. This weekend I decided to try making a fish stew for a change.

I was very pleased with the result, it was gorgeous.

This is the recipe:

Fish Stew

Ingredients

  • 3 tbsp olive oil
  • 3 cloves of garlic, crushed
  • 1 stalk of celery, chopped finely
  • 1 green pepper, diced and deseeded
  • 1 red pepper, diced and deseeded
  • 1 yellow pepper, diced and deseeded
  • 4 tomatoes, chopped
  • 175ml while wine
  • 800 ml fish or vegetable stock
  • ½ tsp cayenne pepper
  • ½ tsp paprika
  • 200g new potatoes, chopped in half
  • 500g white fish, chopped into cubes
  • 200g uncooked king prawns
  • 100g frozen peas
  • Juice of 1 lemon
  • 2 tbsp chopped parsley
  • Black pepper

Method

  1. Crush the garlic cloves and finely chop the onions and celery. Dice the peppers.
  2. Warm the olive oil in a large pan and add the garlic, onions, celery and peppers. Cook until soft but not brown, stirring occasionally.
  3. Chop the tomatoes and add to the pan. Cook for another minute.
  4. Add the wine and cook until it reduces by half.
  5. Add the stock and the spice and bring to the boil
  6. Add the potatoes and cook for fifteen minutes.
  7. Add the fish, prawns and the peas. Reduce the heat and simmer for 5 to 10 minutes until the fish is opaque in the middle.
  8. Add the lemon juice and parsley and season to taste.

I wasn’t sure what to serve it with so I just served the fish stew with plain boiled rice. It would also be lovely with crusty bread warm from the oven. It tasted really nice and I would definitely try this recipe again. My husband and son also loved it, their plates were completely clean.
