Healthy Egg Salad

Now the weather is warmer I find I do not feel like eating much. I like light meals with plenty of taste. Salads are ideal for the heat, they can be eaten leisurely and if you are still hungry you can easily make more. I love to take a salad outside and eat in the garden of an evening, there is something relaxing about catching the last rays of the evening sun. Eggs are a great choice as part of a salad. They are quick and easy to prepare as well as being filled with protein and vitamins. They can be hard boiled and served alongside a salad. I love to make an egg salad with vegetables and hard boiled egg. It is really tasty and any left over can be used in sandwiches.

I have always loved eggs. As a child growing up my mum and dad often had dinner parties for their work colleagues. My mum spent days in the kitchen preparing as much as she could ahead of time. One of the starters she always used to make was made with beef tomatoes and hard boiled eggs. The beef tomatoes and eggs were chopped into slices. The egg was inserted in alternate slices with the tomato which stood on a plate. The whole dish was finished with mayonnaise dribbled elegantly over the top. A light dusting of paprika added the finishing touch. It was the ideal starter, it was easy to make and looked impressive. The pairing of egg and tomato just works so well. I used the idea of egg and tomato to make the base of my salad but added some extra vegetables as well.

Making the salad is so simple just hard boil some eggs and leave them to cool. When they are cool peel them and chop them into small pieces. I then chopped up some red pepper, cucumber, spring onions and tomato into small squares and mixed them with the egg. Mix the salad with a tablespoon of Greek yoghurt and a tablespoon of mayonnaise to make a creamy sauce. If you like a bit of spice you can add a sprinkle of black pepper or a sprinkle of paprika. A sprinkle of garlic and chilli flakes is a great alternative if you like a touch of fire in your salad. Serve on a bed of lettuce.

Egg Salad

Serving Size 2

Ingredients

  • Four eggs
  • 2 to matoes
  • 1 red pepper
  • ¼ cucumber
  • 2 spring onions
  • 1 tbsp Greek yoghurt
  • 1 tbsp mayonnaise

Instructions

  • Boil the eggs until they are hard boiled. Leave to cool.
  • When cool chop into small pieces.
  • Chop the red pepper, cucumber, spring onions and tomato into small squares.
  • Mix with the eggs.
  • Add the yoghurt and mayonnaise and mix together

Notes

Serve on a bed of lettuce or use as a sandwich filling
