- Apples – You’ll need six apples. I like using Granny Smith for their hint of tartness, but Gala or Braeburn apples work well too for a sweeter flavour. Cooking apples are also a good option if you prefer a softer texture.
- Caster Sugar – You will need 2 – 4 tablespoons, depending on your taste. I usually start with 2 tablespoons and more as needed, once the apples start cooking, just to balance the tartness.
- Water – Around 100 ml should be enough to soften the apples. If the apples are taking a while to break down you can add more.
- Plain Flour – just a sprinkle to help roll out the pastry
- Candy Eyes – to add a spooky look to the apple pies. You can find them in the bakery aisle or make your own with white chocolate buttons or mini marshmallows and a drop of melted dark chocolate.
Equipment
- Sharp knife – Essential for slicing the apples. A good knife will make preparation quicker and easier.
- Chopping board – Keeps your workspace clean while you slice the apples
- Apple Corer (Optional) – If you have one, this can speed up removing the cores but a sharp knife works just as well.
- Apple Peeler (Optional) – A peeler can make quick work of peeling the apples but you can use the sharp knife if you prefer.
- Pan – To soften the apples with water and sugar, bringing out their flavour.
- Wooden Spoon – Allows you to stir the apples as they cook
- Pastry Board – Ideal for rolling out the puff pastry and cutting it into strips for your “mummy” wrapping.
- Oven Gloves – To take the hot tray out of the oven
- Rolling Pin – To help roll out the pastry to the right thickness
- Baking Tray – To hold your apple pie mummies while they bake to golden perfection.
Step by Step Instructions
Step 1: Core, Peel, and Chop the Apples
- Start by removing the core from each apple, then peel and cut them into small chunks.
Step 2: Cook the Apples
- In a pan, add the water and sugar and then the chunks of apple
- Heat the pan over a medium heat. As the water begins to boil, the apples will soften and start to break down.
- Stir occasionally to help the apples cook evenly and prevent sticking.
Step 3: Adjust the Texture
- If the mixture becomes too dry, add a bit more water and continue stirring until the apples reach a smooth paste-like consistency
- Taste the apples, and add more sugar if required.
Step 4: Cool and Prepare the Pastry
- Once the apple mixture is smooth, remove it from the heat and leave to cool. While it is cooling, prepare the pastry.
- Sprinkle some flour on your pastry board to stop the pastry from sticking.
- Roll it out using the rolling pin until the pastry is about ½ cm thick.
Step 5: Shape the pastry for the mummies
- Prepare the bases
- Take half of the pastry and cut it into rectangles. You can make three long thin mummy shapes, six smaller rectangles or even circles if you prefer mummy faces.
- Cut the strips for wrapping
- With the remaining half of the pastry, cut thin strips to use as the mummy wrapping
Step 6: Assemble the Mummies
- Preheat the Oven
- Preheat your oven to 180°C (350°F, Gas Mark 4).
- Prepare the Baking Tray
- Line a baking tray with baking parchment to prevent the pies from sticking and then place the pastry rectangle bases on the tray
- Add the Apple Filling
- Spoon the apple mixture onto each pastry base. If you like, gently roll up the edges of each base to create a small border, which will make adding the pastry strips easier.
- Create the Mummy Wrapping
- Lay the pastry strips across each apple-filled base in a crisscross pattern, like mummy bandages, leaving a small space open for the eyes. To help the strips stick, use a dab of water where the strips meet the edges.
Step 7: Bake
- Pop the baking tray into the oven for 25 to 30 minutes. The pastry should become golden brown and rise.
- Remove the tray from the oven and leave to cool. When they are cool pop on the candy eyes to create the mummy effect.
