Bacon and Egg Bagels – Halloween Eyeballs
These bacon and egg bagels are perfect for Halloween. A bed of avocado ooze compliments the bacon and the egg eyeball peers though the hole in the bagel.
Everyone is familiar with bagels. These round breads with a hole in the middle are a blank canvas. Use them to create a satisfying snack or a meal. The possibilities are endless. The word bagel comes from the German ‘bougel’ or bracelet which explains round shape with the distinctive hole.
To create a bagel you need to shape the dough into a ring. Before baking the dough is boiled. This gives it a dense chewy texture with a crisp outside. Bagels can be sweet or savoury which makes them ideal for a snack. If you want a savoury breakfast bagel or a sweet mid morning snack, there will be a flavour to suit.

Bagels take a while to make. Fortunately they are easy enough to buy in shops, you just need to worry about topping them. The New York Bakery Co. have just bought out Maple Mini Bagels. These are snack sized bagels but are still the real deal. Soft out the outside, chewy in the middle and with the subtle taste of maple syrup. To mark the launch the New York Bakery Co. have a challenge to create the perfect spooky bagel topping. This should be perfect for Halloween or bonfire night parties.
I came up with Bacon and egg bagels. The bacon rests on a bed of green slime which oozes out when you take a bite. This is a mix of avocado, lemon juice and mayonnaise with couple of cherry tomatoes chopped into it. Topping the crispy bacon is a fried egg with a runny yolk. The yolk peeps though the hole in the bagel looking like an eyeball. The maple bagel works really well with the whole sandwich creating a taste sensation.

These would be perfect to serve for a Halloween breakfast bagel or for a snack after a busy night trick or treating. A big bowl of pumpkin soup is also a great idea for warming you up on a cold Autumn night.

How to make a bacon and egg bagel
Making a bacon and egg breakfast bagel is easy. First trim the fat off the bacon and place it on a baking tray lined with foil. Turn on the oven to 180C, Gas Mark 4. Place the bacon in the oven for ten minutes or until it is crisp.
While the bacon is cooking prepare the avocado. Mash a ripe avocado and add a teaspoon of lemon juice and a teaspoon of mayonnaise. Mix together and season with black pepper. Chop three cherry tomatoes and add to the mixture.
Now fry an egg. Usually when I fry an egg it goes everywhere. When I made this bacon and egg bagel I tried to make those round eggs that you find at McDonalds. I had a round pastry cutter and put this in the pan. This made the egg keep a round shape which looks nicer.
Toast your maple bagel and spread with the avocado. Top with the bacon and egg. Pop the bagel on top so that the yolk peeps though the hole. If you are feeling creative you could add some eyelashes for extra effect.

Ingredients
- 4 New York Bakery Co Maple Bagles
- 2 avocados
- 1 lemon, juiced
- 8 cherry tomatoes
- 8 rashers of bacon
- 4 eggs
- 1 tbsp mayonnaise
- black pepper to season
Instructions
- Chop the fat from the bacon and place on a foil lined baking trayTurn the oven on to 180C Gas Mark 4Place the bacon in the oven for ten minutes until crispMash the avocado with the lemon juice and mayonnaiseAdd some black pepper for seasoning.Fry the eggs until they are cooked but the centre is runny. Use an egg ring to keep them roundToast the bagelsSpread with the avocado mixture, add two slices of bacon and the egg on top. Place the top of the bagel so the yolks shows though the hole.
