Kale burst onto our dinner plates in a frenzy of frothy green leaves. It is not just a vegetable for show, kale is a trendy superfood. Delicious, versatile and a great source of vitamin A. It is not just carrots that help you see in the dark. Gone are the days of soggy cabbage, the delicious earthy tones of kale work well with many dishes.

Creating a kale cocktail
To create a cocktail with kale you need kale juice. Well you could make a cocktail with some curly kale leaves sticking out but it wouldn’t have the same taste. Luckily I own a juicer which makes it really easy to make juice from kale leaves. If you don’t have a juicer you can use a blender and strain the mixture through a sieve to remove the pulp.

In recent times juicing has become very much a thing. Juice diets are part of a detox and lose weight regime. Green juice is meant to pack a power punch of vitamins in one glass. Why not combine the craze for juicing with alcohol and create a healthy cocktail? Enjoy the weekend with less guilt. The only question to answer is what should I use with kale to make the perfect cocktail.
Kale cocktail – A whiter shade of kale
I chose the name “A whiter shade of kale” for my cocktail. It seems apt. The colour of the kale is paler due to mixing with the other ingredients. I chose to use apples and a lime with a splash of gin for my other ingredients. The kale integrates perfectly into the drink adding several layers of herbal complexity to the taste. The apples and lime add a little sweetness which works perfectly with the kale.
The drink has a lovely flavour. Sweet overtones with a darker earthy background from the kale and a kick of alcohol from the gin. It is the perfect drink to start the weekend. You can feel virtuous that you are drinking a superfood whilst still enjoying a tipple. Just don’t over do it. It doesn’t feel alcoholic so the effect can creep up on you.

I chose to use Pin Gin in this cocktail, created by Bottomley Distillers. They are a Lincolnshire based Gin producer and they have made a unique and enticing gin with a special flavour. I am not a great gin lover, often finding it too aromatic. This gin is lovely however and set the cocktail off perfectly.
A whiter shade of kale cocktail recipe
The recipe is really easy to make. Remove the cores from three apples, peel a lime and take a handful of kale. Put these into a juicer and let it make juice. Add a measure of gin into a glass and mix with the juice. You can add ice if you wish.

Ingredients
- 1 measure gin
- 3 apples
- 1 lime
- handful kale
Instructions
- Core the apples and peel the lime
- Add the apples, kale and lime to a juicer and make juice
- Pour the gin into a glass
- Add the juice and mix
- Garnish with a slice of lime
