Peanut Butter Cookies
Recently Whole Earth got in touch with me and asked me if the family would like to become Official Whole Earth Testers. Our whole family love peanut butter and peanuts so I was delighted to get involved. Peanut butter was very much a part of my childhood, I remember coming home from school and being given sandwiches covered with crunchy peanut butter to snack on. This was the perfect snack, full of protein, fueling me though until dinner time. I remember being really intrigued by the idea of peanut butter and jelly sandwiches on a visit to America. I was rather disappointed to learn the jelly was jam rather than the wibbly wobbly jelly I was expecting. The combination was quite nice though, although an acquired taste.
Peanut butter is great for cooking with and when my whole earth peanut butter arrived my first thought was to make some peanut butter cookies. I love peanut butter cookies, they are the perfect cookie to have with a glass of milk. The added crunch of peanuts makes them even more tasty, taking them to another level.
Before I baked the cookies I had to try some of the Whole Earth Peanut butter. It is a natural source of protein and no extra sugar is included. It tastes delicious. My son and my dog both loved it, the dog is a well known lover of peanuts and has been known to steal them on occasion. My son was interested to see peanuts in their shells and happily shelled them. The dog was lucky enough to catch a few that fell to the floor. Whole Earth Peanut butter comes in both crunchy and smooth varieties so there is one to suit everyone.
We set to work making peanut butter cookies, they are really easy to make. It is really just a question of mixing up the ingredients, pressing them out into circles and cooking until they are done. Baking is a great way to pass time at the weekend, there is something relaxing about mixing and stirring and then smelling the cookies as they bake in the oven, filling the house with the promise of things to come. I often bake at the weekend, last weekend I finally managed Millionaires Shortbread which was a great success.
The hard part is waiting for them to cool on the tray, it seems to take ages for them to be cool enough to eat. I am sure a couple disappeared while I was waiting but I could have imagined that. Finally they were ready and we enjoyed them with a cup of tea.
They were worth the wait, gorgeous peanut cookies with extra crunch from the added nuts. They did not last long at all.

Peanut Butter Cookies
Ingredients
- 45 g peanut butter
- 50 g butter
- 50 g caster sugar
- 45 g light soft brown sugar
- 1 egg
- 100 g plain flour
- 10 g baking powder
- 50 unsalted peanuts
Instructions
- Preheat the oven to 180C, Gas Mark 4
- Cream together the butter and sugar until soft and fluffy.
- Add the egg, flour, peanut butter and baking powder and mix into a dough.
- Add the peanuts and mix though
- Put some baking parchment on a baking tray.
- Roll the dough into small balls and place on the baking tray.
- Press with a fork
- Bake for 25 minutes until golden
