Pineapple Pork Chops Recipe
My Mum used to make a lovely chicken dish that involved a tin of crushed pineapple and chicken breasts. I really need to find the recipe as I’ve lost it. When I was going though my cupboards at the weekend I found a tin of crushed pineapple and wondered if I could recreate it. Unfortunately I didn’t have any chicken in the fridge. I did have some pork chops so I decided to experiment a little.
This was the result:
The crushed pineapple went really nicely with the pork and made a sweet sauce with a slight tang to it. My husband and son both enjoyed the meal and plates were empty which was a good sign. I was pleased with the result and will have to try a variation on the recipe with chicken soon.
Pineapple Pork Chops
Ingredients
- Four pork chops
- 1 tin crushed pineapple (220g/ 8 oz)
- 4 tsp soy sauce
- 1 tsp ginger
- 1 tbsp honey
- 1 tbsp tomato puree
Method
- Preheat the oven to 400 F 200C Gas Mark 6
- Place the pork chops in a casserole dish.
- Mix together the rest of the ingredients and cover the chops in the sauce.
- Place in the oven for 40 minutes until the chops are tender.
I served with mash and peas but these would be equally nice served with rice and salad. If you fancy a little bit of a kick I think a few chilli flakes would make a nice addition.
